Warming apple and cinnamon oats
Serves 1
Ingredients:
1/4 C wholegrain oats or buckwheat (GF) soaked in water overnight then rinsed.
3/4 C milk of choice
¼ tsp cinnamon
1/2 an apple – grated with skin on
1-2 Tbsp chia seeds (depending on preference)
Lemon zest to taste (optional)
1 large tsp ground linseed
1 Tbsp Hemp seeds
To serve:
¼ C High protein yogurt (eg Anchor Plus Natural Unsweetened Greek Yogurt)
1 Tbsp Hemp seeds
1 Tbsp natural peanut butter or almond butter
A few frozen berries
Method:
After soaking wholegrain oats or buckwheat overnight, rinse well in a sieve then place in a small pot.
Add milk, cinnamon, grated apple, chia seeds and lemon zest. Simmer on low-med heat for 5 minutes.
Stir through linseed and 1Tbsp of hemp seeds. Thin down with a little extra water or milk if desired.
Serve with yogurt, remaining hemp seeds, nut butter & a few berries.
