Warming apple and cinnamon oats

Serves 1

Ingredients:

  • 1/4 C wholegrain oats or buckwheat (GF) soaked in water overnight then rinsed.

  • 3/4 C milk of choice

  • ¼ tsp cinnamon

  • 1/2 an apple – grated with skin on

  • 1-2 Tbsp chia seeds (depending on preference)

  • Lemon zest to taste (optional)

  • 1 large tsp ground linseed

  • 1 Tbsp Hemp seeds

To serve:

  • ¼ C High protein yogurt (eg Anchor Plus Natural Unsweetened Greek Yogurt)

  • 1 Tbsp Hemp seeds

  • 1 Tbsp natural peanut butter or almond butter

  • A few frozen berries

Method:

  1. After soaking wholegrain oats or buckwheat overnight, rinse well in a sieve then place in a small pot.

  2. Add milk, cinnamon, grated apple, chia seeds and lemon zest. Simmer on low-med heat for 5 minutes.

  3. Stir through linseed and 1Tbsp of hemp seeds. Thin down with a little extra water or milk if desired.

  4. Serve with yogurt, remaining hemp seeds, nut butter & a few berries.
